WISH I COULD CALL IN SICK!
Last week I was down for the count. I’d managed to catch yet another bug from my 2 year old, and I wanted nothing more than to lay in bed all day. Unfortunately, that was not an option.
So I decided to do the next best thing and make myself a batch of homemade chicken noodle soup. Thankfully I had all the ingredients on hand, so I didn’t have to run out and expose the world to my cooties.
I grabbed my favorite pot, a box of Simple Truth organic free range chicken broth, pulled a couple of chicken breast out of the fridge, sliced a few carrots, and celery sautéed some onion and I was off.
I use Simple Truth because, it’s affordable and I love knowing that I’m putting good things into my body, without breaking the bank.
Chicken Noodle Soup recipe:
Ingredients
1 Tablespoon olive oil
1 boneless skinless chicken breast cut half
1 cup baby carrots diced
2 celery ribs diced
1 and 1/2 cup wide noddles
3 cups chicken stock or broth
1 teaspoon Italian seasoning
1/2 teaspoon dried oregano
salt and pepper to taste
Instructions
-Heat up olive oil in a stock pot.
-Add chicken breast and brown on both sides, 2 minutes or so.
-Remove the chicken onto a plate and set aside.
-Add diced veggies to the pot. Add more oil if needed.
-Saute for about 4 to 5 minutes.
-Add the chicken back. Add stock or broth, Italian seasoning and oregano.
-Bring to boil and cook for 3 to 4 minutes.
-Add noodles and cook until done.
-Season with salt and pepper to taste.
